Ingredients

  • 2 farm eggs
  • 1–2 Yukon gold or red potatoes, thinly sliced
  • Olive oil or butter, for cooking
  • Summa Salts Brunch Salt
  • Fresh herbs (optional, for garnish)

Instructions

  1. Heat a skillet over medium heat and add a drizzle of olive oil.
  2. Add the thinly sliced potatoes and cook until golden and crisp, flipping as needed (8–10 minutes).
  3. Push potatoes to one side and crack in your eggs. Cook sunny-side up or to your liking.
  4. Sprinkle Brunch Salt over the eggs and potatoes while hot.
  5. Garnish with herbs if desired. Serve immediately with toast and coffee.
