Ingredients

  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken or veggie broth
  • 1 tbsp olive oil or butter
  • 1 tsp Summa Salts Lemon Herb Salt
  • 1 tbsp lemon juice
  • Zest from 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp slivered almonds, toasted (optional)

Instructions

  1. In a saucepan, heat the olive oil or butter over medium heat. Add the rice and stir until lightly toasted (about 2–3 minutes).
  2. Add the broth and bring to a boil. Reduce heat to low, cover, and simmer for 15–18 minutes until the rice is tender and liquid is absorbed.
  3. Turn off the heat. Fluff the rice with a fork and stir in the Lemon Herb Salt, lemon juice, and zest.
  4. Top with chopped parsley and toasted almonds. Serve warm and enjoy!
