Lemon Herb Rice Pilaf

Ingredients
- 1 cup long-grain white rice
- 2 cups low-sodium chicken or veggie broth
- 1 tbsp olive oil or butter
- 1 tsp Summa Salts Lemon Herb Salt
- 1 tbsp lemon juice
- Zest from 1 lemon
- 2 tbsp fresh parsley, chopped
- 2 tbsp slivered almonds, toasted (optional)
Instructions
- In a saucepan, heat the olive oil or butter over medium heat. Add the rice and stir until lightly toasted (about 2–3 minutes).
- Add the broth and bring to a boil. Reduce heat to low, cover, and simmer for 15–18 minutes until the rice is tender and liquid is absorbed.
- Turn off the heat. Fluff the rice with a fork and stir in the Lemon Herb Salt, lemon juice, and zest.
- Top with chopped parsley and toasted almonds. Serve warm and enjoy!
