Potatoes Confit with Summa Salts Purple Cayenne

Purple Cayenne 

Ingredients:

  • 1 lb baby potatoes (Yukon Gold or fingerlings)
  • 2 cups olive oil (enough to submerge the potatoes halfway)
  • 2-3 cloves garlic, smashed
  • 2 tsp Summa Salts Purple Cayenne Seasoning Salt
  • 1/2 tsp freshly cracked black pepper
  • Fresh thyme sprigs (optional for flavor)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).

  2. Prepare Potatoes: Clean and dry the baby potatoes, leaving the skins on.

  3. Arrange in Pan: In a large, oven-safe dish or cast-iron skillet, arrange the potatoes in a single layer. Add the smashed garlic cloves and thyme sprigs if using.

  4. Add Oil & Seasoning: Pour in enough olive oil to cover the potatoes halfway. Sprinkle the Summa Salts Purple Cayenne Seasoning Salt and cracked black pepper evenly over the potatoes.

  5. Roast & Flip: Place the dish in the oven and roast for 50 minutes, flipping the potatoes every 15 minutes to ensure even cooking and browning.

  6. Serve: Once tender and golden, remove from the oven and serve immediately.
