Spicy Cucumber Salad

Summa Salt Pair Spicy Pickle

  • 1 teaspoon Summa Salt’s Spicy Pickle
  • 2 large English cucumbers
  • 1/2 medium red onion
  • 2 tablespoons chopped fresh parsley
  • 1 half lemon
  • 1 tablespoon olive oil
  • 1 teaspoon honey (optional)
  • Freshly ground black pepper, to taste


  1. Prepare the vegetables: Wash the cucumbers and slice them thinly. Peel the red onion and slice it thinly.
  2. Combine ingredients: In a large mixing bowl, combine the sliced cucumbers, sliced red onion, and chopped cilantro.
  3. Make the dressing: In a small bowl, whisk together the juice of the half lemon, olive oil, honey, Summa Salt’s Spicy Pickle and freshly ground black pepper.
  4. Toss the salad: Pour the dressing over the cucumber and onion mixture in a large bowl. Toss everything together until the vegetables are evenly coated with the dressing.
  5. Chill: Cover the bowl with plastic wrap or transfer the salad to a sealed container. Refrigerate for at least 30 minutes to allow the flavors to meld together and the salad to chill, stirring occasionally.

Add more Spicy Salt as desired. Can be served with brunch items or served alongside grilled meats and rice.
