This reverse-sear ribeye steak is our go-to method for getting a perfect crust and juicy center. It’s finished with a generous sprinkle of Unicorn Salt or Spicy Unicorn Steak Salt — both bring bold herbal flavor without overpowering the meat.

  • 1 thick-cut ribeye steak (1.25" to 2" thick)
  • 1 tsp Unicorn Salt or Spicy Unicorn Steak Salt
  • Neutral oil (avocado or grapeseed)
  • Optional: 1 tbsp butter, 2 smashed garlic cloves, fresh rosemary

🔥 Step-by-Step Instructions

Step 1: Salt + Rest

Generously season both sides of your steak with Unicorn Salt. Let rest on a rack in the fridge (or countertop) for 30–60 minutes while the salt works into the meat.

Step 2: Oven Cook

Preheat your oven to 250°F. Place the steak on a wire rack over a baking sheet. Cook until internal temp hits ~115°F (about 30–40 minutes depending on thickness).

Step 3: Reverse Sear

Heat a cast iron pan until smoking. Add a splash of oil, then sear steak 45–60 seconds per side to build a crust. Optional: baste with butter, garlic, and rosemary during the last 30 seconds.

Step 4: Rest + Slice

Remove steak from pan, let rest 5 minutes, then slice against the grain and serve immediately.
