Garlic-Lovers Chuck Roast with Vampire Killer Salt

Ingredients

  • 3–4 lb chuck roast
  • 2 tbsp Summa Salts Vampire Killer
  • 1 tbsp olive oil
  • 1 tsp cracked black pepper
  • 1 lb baby potatoes, halved
  • 2 cups carrots, peeled and cut
  • 4–5 garlic cloves, smashed
  • 2 sprigs fresh rosemary (optional)

Instructions

  1. Preheat oven to 325°F.
  2. Pat the chuck roast dry. Rub with olive oil, Vampire Killer salt, and black pepper.
  3. In a Dutch oven or cast iron pan, sear the roast on all sides until browned (about 3–4 min per side).
  4. Remove from heat. Add potatoes, carrots, garlic, and rosemary around the roast.
  5. Cover tightly with foil or lid.
  6. Roast for 3–3.5 hours, until fork-tender.
  7. Let rest 10 minutes. Slice and serve with the veggies and pan juices.
