Garlic-Lovers Chuck Roast with Vampire Killer Salt
Ingredients
- 3–4 lb chuck roast
- 2 tbsp Summa Salts Vampire Killer
- 1 tbsp olive oil
- 1 tsp cracked black pepper
- 1 lb baby potatoes, halved
- 2 cups carrots, peeled and cut
- 4–5 garlic cloves, smashed
- 2 sprigs fresh rosemary (optional)
Instructions
- Preheat oven to 325°F.
- Pat the chuck roast dry. Rub with olive oil, Vampire Killer salt, and black pepper.
- In a Dutch oven or cast iron pan, sear the roast on all sides until browned (about 3–4 min per side).
- Remove from heat. Add potatoes, carrots, garlic, and rosemary around the roast.
- Cover tightly with foil or lid.
- Roast for 3–3.5 hours, until fork-tender.
- Let rest 10 minutes. Slice and serve with the veggies and pan juices.
