Meet The Salt Lady

Sarah McElrea is the heart behind Summa Salts — and the Salt Lady locals know by name.

Based in Jacksonville, Florida, Sarah is a former science teacher turned flavor alchemist. She founded Summa Salts to share the herbs, peppers, and citrus she grew in her backyard — one jar at a time.

What started at a local farmers market has now become a regional favorite. Sarah still makes every batch by hand, using sea salt and homegrown ingredients to create blends like Dill Pickle Salt, Unicorn Steak Salt, and Vampire Killer Garlic Salt.

Whether you met her at the Atlantic Beach market, followed her on Instagram, or found her salts in a local shop — you’ve probably heard someone say:

“You’ve gotta try it — the Salt Lady makes it.”
